Hi, I'm welding an insert into an aluminum tube, but I have an opening close to the weld that I need to stay open. Will inserting a stainless steel strip into the opening prevent it from closing?

I would try some copper. The melting point of copper is much higher than of alum.

A piece of carbon air arc rod works good on steel to keep the weld out of a threaded hole, However because your welding aluminum I think copper would work better for your situation.
