The process is covered in detail on page 44 of your owner's manual.
Really pretty easy.
Turn the power on. Quickly press the Polarity and Waveshapes switch pads before the software version clears the meters and SEL SSQ will appear. (SSQ will initially appear because this is the default value set from the factory)
The AC, Balance, and Frequency LED's will light.
Use the encoder to select between advanced squarewave (ASq), soft squarewave (SSq), sine wave (SIN), or triangle wave (TRI).
To save changes and exit, press torch trigger (tap the pedal if that's the remote you use) or turn power off. Setting will be retained when you turn the machine back on.
Page 44 also tells where each setting is most useful.

Wise statement.
The Dynasty 200 is not a cheap buzzbox you take out, set on the table, plug in the leads and start welding.
Once you've used the machine for awhile, things will become somewhat intuitive, however, without the manual, I don't hardly see how anyone could use the machine to it's capabilities.
