lighter to darker....higher amperage, differant processes all have a differant amout of light they give off

What is a number 6 used for? A number 10, 11 or 12? Is there a number 7, 8, 9? Are there darkers ones.

In a nutshell, the shade is for visible light only. UV is already stopped to the maximum extent possible.
Use whatever is most comfortable FOR YOU for each process, but in general, a #5 is useful in torch cutting and plasma cutting and #8 - #12 are common arc welding shades, depending on amperage.
It also depends on how much welding you do each day, as the lighter shades can cause more fatigue over time. But for part-timers this is rarely an issue.
It also depends on how much ambient light you have and the details of your weldment as to whether or not you need more visibility while you are welding.
